Hard-boiled eggs filled with a creamy, herby avocado-yolk mixture and dusted with smoked paprika. The classic, upgraded.
Ingredients
- Eggs6
- Ripe avocado1
- Lemon or lime juicea squeeze
- Garlic powdera pinch
- Dijon mustarda small dab
- Salt and pepperto taste
- Smoked paprikato dust generously at the end
- Fresh coriander or chivesoptional garnish
Method

Hard boil eggs, cool in ice water, peel. Slice in half and pop the yolks into a bowl.

Mash yolks with avocado, lemon juice, mustard, garlic powder, salt, and pepper until smooth and creamy. Taste and adjust.

Spoon or pipe the filling back into the egg whites โ be generous, let it mound up.

Dust liberally with smoked paprika. That orange-on-green contrast is the whole visual. Serve within the hour.
