Hard-boiled eggs filled with a creamy, herby avocado-yolk mixture and dusted with smoked paprika. The classic, upgraded.

Ingredients

  • Eggs6
  • Ripe avocado1
  • Lemon or lime juicea squeeze
  • Garlic powdera pinch
  • Dijon mustarda small dab
  • Salt and pepperto taste
  • Smoked paprikato dust generously at the end
  • Fresh coriander or chivesoptional garnish

Method

    Hard boil eggs, cool in ice water, peel. Slice in half and pop the yolks into a bowl.

    Mash yolks with avocado, lemon juice, mustard, garlic powder, salt, and pepper until smooth and creamy. Taste and adjust.

    Spoon or pipe the filling back into the egg whites โ€” be generous, let it mound up.
