Zucchini sticks coated in a crispy parmesan and breadcrumb crust, baked until golden. The snack that makes you forget you're eating a vegetable.
Ingredients
- Zucchini2 medium, cut into sticks
- Parmesan, finely grateda generous handful
- Breadcrumbs (panko is great)a handful
- Egg1, beaten
- Garlic powder, salt, peppera pinch of each
- Olive oil sprayto crisp up the tops
Method

Mix parmesan, breadcrumbs, garlic powder, salt, and pepper on a plate.

Dip each zucchini stick in egg, then press firmly into the parmesan mix on all sides.

Arrange on a lined baking tray. Spray lightly with olive oil. Bake at 425°F for 20 minutes, flipping once halfway, until golden and crispy.
