A generous toss of iceberg, hard-boiled egg, cherry tomatoes, corn, edamame, black olives, and red onion. The salad that actually fills you up.

Ingredients

  • Iceberg or romaine lettuce, roughly torna big handful
  • Hard-boiled eggs2, sliced
  • Cherry tomatoesa handful, halved
  • Sweet corna handful
  • Shelled edamamea handful
  • Black olivesa handful
  • Red onion, thinly sliceda few rings
  • Fresh parsleya handful
  • Olive oil, lemon juice, salt, pepperfor dressing

Method

    Hard boil eggs, cool, peel, and slice.

    Toss lettuce, corn, edamame, tomatoes, olives, and onion together in a large bowl. Don't be timid with the bowl size — you need room to toss.

    Dress with olive oil, lemon juice, salt, and pepper. Toss well.

    Lay egg slices over the top, scatter parsley, crack more black pepper. Serve immediately.
