A generous toss of iceberg, hard-boiled egg, cherry tomatoes, corn, edamame, black olives, and red onion. The salad that actually fills you up.
Ingredients
- Iceberg or romaine lettuce, roughly torna big handful
- Hard-boiled eggs2, sliced
- Cherry tomatoesa handful, halved
- Sweet corna handful
- Shelled edamamea handful
- Black olivesa handful
- Red onion, thinly sliceda few rings
- Fresh parsleya handful
- Olive oil, lemon juice, salt, pepperfor dressing
Method

Hard boil eggs, cool, peel, and slice.

Toss lettuce, corn, edamame, tomatoes, olives, and onion together in a large bowl. Don't be timid with the bowl size — you need room to toss.

Dress with olive oil, lemon juice, salt, and pepper. Toss well.

Lay egg slices over the top, scatter parsley, crack more black pepper. Serve immediately.
