Two perfectly fried eggs on golden toasted bread, alongside fresh baby spinach, cherry tomatoes, and red onion. The breakfast that never lets you down.

Ingredients

  • Eggs2
  • Bread1 thick slice, toasted
  • Butter or oila small knob
  • Baby spinacha handful
  • Cherry tomatoesa handful, halved
  • Red oniona few thin rings
  • Salt and black peppergenerously

Method

    Toast your bread until it has real colour โ€” not pale, not burnt. Somewhere gloriously golden.

    Heat butter in a pan over medium. Crack in both eggs. Cook until the whites are fully set but the yolk still has some give. Season with salt and a heavy hand of black pepper.

    Slide eggs onto the toast. Arrange spinach, tomatoes, and onion rings alongside. Eat while the eggs are still hot.
