Charred sweet potato cubes and wilted spinach with caramelised onion, topped with a crispy fried egg and cool avocado chunks. The bowl that makes weekday mornings feel intentional.
Ingredients
- Sweet potato, diced1 medium
- Red onion, roughly slicedhalf
- Baby spinacha big handful
- Egg1
- Avocado, cubedhalf
- Olive oila drizzle
- Smoked paprika, cumin, salt, pepperto season the sweet potato
- Chilli flakesto finish
Method

Toss sweet potato with oil, paprika, cumin, salt, and pepper. Roast or pan-fry on high heat until the edges are charred and the inside is tender.

In the same pan, cook onion until soft and caramelised. Add spinach and let it wilt โ a minute is enough.

Fry the egg in a little oil โ crispy whites, runny yolk. Season with chilli flakes and black pepper.

Build the bowl: sweet potato and spinach at the base, egg on top, avocado alongside. Eat while the egg is still warm.
