Thick-spread hummus toast loaded with diced cucumber, tomato, red onion, and feta, alongside a crispy chilli-flaked fried egg and a handful of fresh fruit. Breakfast that feels like a full meal.

Ingredients

  • Bread, toasted2 slices
  • Hummusa generous spread
  • Cucumber, diceda chunk
  • Cherry tomatoes, halveda handful
  • Red onion, finely diceda little
  • Feta, crumbleda handful
  • Egg1, fried
  • Chilli flakesa good pinch on the egg
  • Grapes and cherriesa handful alongside
  • Olive oil, salt, pepperto finish

Method

  1. 1

    Toast bread. Spread hummus thick — this is the base, not a condiment.

    Toss cucumber, tomato, and onion with a pinch of salt and olive oil. Pile onto the hummus toast. Crumble feta over generously.

    Fry the egg until the white is lacy and crisp at the edges. Hit it with chilli flakes while still in the pan.

    Plate everything together with fresh fruit on the side. Eat without guilt.
