Creamy vanilla chia pudding layered with a vivid strawberry compote and fresh whole strawberries on top. Make it the night before and the morning takes care of itself.
Ingredients
- Chia seeds3โ4 tbsp
- Milk (dairy or plant-based)1 cup
- Vanilla essencea few drops
- Honey or maple syrupa drizzle
- Fresh strawberriesa punnet
- Lemon juicea small squeeze for the compote
Method

Mix chia seeds, milk, vanilla, and sweetener. Stir well, then stir again after 5 minutes to prevent clumping. Refrigerate overnight โ or at least 4 hours.

For the compote: mash or briefly cook half the strawberries with a squeeze of lemon and a touch of honey until jammy. Cool completely.

Layer in a glass: chia pudding at the base, compote in the middle, fresh strawberries piled on top.

Eat cold. The contrast of creamy, jammy, and fresh all in one spoon is the whole point.
