Roasted sweet potato cubes, sautéed kale, and a crispy sesame-flecked fried egg, served alongside fresh strawberries. The breakfast bowl that earns its colour.
Ingredients
- Sweet potato, cubed1 medium
- Kalea handful, stems removed
- Egg1
- Fresh strawberriesa handful
- Black sesame seedsa sprinkle
- Chilli flakesa pinch on the egg
- Olive oil, salt, pepperto season
Method

Roast sweet potato with oil, salt, and pepper at 400°F until caramelised — about 20 minutes. The edges should catch a little.

Sauté kale with olive oil and a pinch of salt until wilted and slightly crispy at the edges.

Fry egg over medium-high heat until the edges are golden and lacy. Sprinkle with black sesame and chilli flakes.

Arrange everything in a bowl: sweet potato, kale, egg in the centre, strawberries alongside. Eat while warm.
